Our kitchen team is headed up by chef Somontha who honed her skills over 12 years at the Amansara Resort setting up cooking classes at their village house. She was appointed to cook on the occasion of the King’s father’s visits to Siem Reap.
Her passion is to refine simple street food with the very best ingredients for our guest’s enjoyment. For example Num Kruok is a Cambodian rice cake traditionally cooked in a tray of clay moulds, which give its distinctive shape. At Khmer Touch Cuisine this simple dish of puffed rice flower becomes a melt in the mouth marshmallow with a delicious milky favour offset by the sharp bite of chopped spring onion in the centre. Num Kruok is served with a coconut and peanut dipping sauce.
Whatever mouth-watering dish you select our chef will introduce you to unique flavours created from the best quality ingredients supporting local farmers. Seasonal organic vegetables picked that morning, local fish sourced fresh from the Tonle Sap Lake or flown direct from the coast and meat from farmers in the Siem Reap countryside are selected every morning from Psa Leu, the main local market.
Edible flowers and leaves from the forests around Angkor, spices such as lemongrass, galangal, turmeric, tamarind and our signature herb the kaffir lime leaf shown in our logo, are mixed with palm sugar and coconut milk to recreate favourite Khmer dishes with a different interpretation using delicious chunks of fresh fish and meat.
Our furniture is made from sustainable sugar palm, our ceramics come from a pottery not far from town. Elegant cutlery and simple glassware complete the contemporary table design.
